  • Mascarpone 500 Gr
  • Eggs 4
  • Sugar 100 Gr
  • Moka Coffee 200 ML
  • Savoiardi 400 Gr
  • Cocoa powder
  • Salt


  • Cook the coffee and let it to cool down
  • Separate the egg yolks from the egg whites
  • In the bowl with egg yolks, add 80 grams of sugar and whisk well
  • Beat the egg whites and salt together until foamy, then slowly pour in the remaining of the sugar and beat until stiff peaks form.
  • Add mascarpone in the egg yolks and mix again
  • Pour egg whites into egg yolks and mascarpone mixture and mix gently until is all nicely mixed together
  • Pour very small amount of the cream in the pan and spread all over the pan
  • Dip savoiardi cookies one by one in the cold coffee and place the nicely in the pan until the whole bottom of the pan is covered.
  • Pour half of the mascarpone cream over the savoiardi and spread evenly.
  • Repeat the dipping process and then put the rest of the mascarpone cream on top
  • Use cocoa powder and gently spread it all over the mascarpone cream.
