TIRAMISÙ

INGREDIENTS
- Mascarpone 500 Gr
- Eggs 4
- Sugar 100 Gr
- Moka Coffee 200 ML
- Savoiardi 400 Gr
- Cocoa powder
- Salt
STEPS
- Cook the coffee and let it to cool down
- Separate the egg yolks from the egg whites
- In the bowl with egg yolks, add 80 grams of sugar and whisk well
- Beat the egg whites and salt together until foamy, then slowly pour in the remaining of the sugar and beat until stiff peaks form.
- Add mascarpone in the egg yolks and mix again
- Pour egg whites into egg yolks and mascarpone mixture and mix gently until is all nicely mixed together
- Pour very small amount of the cream in the pan and spread all over the pan
- Dip savoiardi cookies one by one in the cold coffee and place the nicely in the pan until the whole bottom of the pan is covered.
- Pour half of the mascarpone cream over the savoiardi and spread evenly.
- Repeat the dipping process and then put the rest of the mascarpone cream on top
- Use cocoa powder and gently spread it all over the mascarpone cream.
