RISOTTO WITH MUSHROOMS

INTRODUCTION

INGREDIENTS

  • Vegetable broth
  • Fresh mushroom mix
  • Frozen or fresh champignons
  • Onions
  • Rice
  • Salt
  • White wine
  • Margarine

STEPS

  • Cut the onions in cubes and put in a big pot with olive oil
  • Add the rice and mix for about 2 minutes
  • Put some white wine too and wait until it is evaporated
  • At this point, start adding enough vegetable broth using a ladle until all the rice is covered. Every time the broth starts getting absorbed, add more and keep mixing every now and then, so that the rice doesn’t stick to the bottom of the pot
  • Keep adding the broth until the rice is cooked (approx. 15-18 min, see cooking time)
  • Switch off the fire, add some more salt if necessary and the margarine to make it all more creamy.
