VEGAN MAYO

INTRODUCTION

- Unusual/Specific Tools Required: Immersion blender
INGREDIENTS
- 3 TBSP of aquafaba
- 1 handful of chickpeas
- 750 ml of sunflower oil
- Mustard
- Garlic, pepper, salt
STEPS
- Put aquafaba and the chickpeas in the immersion blender and start mixing;
- Slowly add the sunflower oil to thicken it up;
- When you see it’s becoming thicker, first add the mustard, then the lemon juice, salt and pepper.
