VEGAN MAYO

INTRODUCTION

Denes’s  special vegan mayo.

  • Type of Meal: Sauce

  • Number of servings: 10
  • Unusual/Specific Tools Required: Immersion blender

INGREDIENTS

  • 3 TBSP of aquafaba
  • 1 handful of chickpeas
  • 750 ml of sunflower oil
  • Mustard
  • Garlic, pepper, salt

STEPS

  • Put aquafaba and the chickpeas in the immersion blender and start mixing;
  • Slowly add the sunflower oil to thicken it up;
  • When you see it’s becoming thicker, first add the mustard, then the lemon juice, salt and pepper.
  • Buon appetito!
