TOMATO SOUP WITH BEANS AND VEGETABLES
INTRODUCTION
A warming soup for a cold day during autumn or winter

INGREDIENTS
- 6 onions
- 3 garlic cloves
- 500 g of celery
- 5 carrots 5
- 5 potatoes 5
- 2 cabbages 2
- 3 kg of legumes mix
- 1 L of tomato sauce
- water
- a bit of red wine
STEPS
- Cut the onions, garlic, celery, carrots in small cubes and put in a pan with some olive oil;
- Cut the potatoes in small pieces and add those too;
- Simmer with a bit of red wine and let it evaporate;
- Put tomato sauce as well, add salt and enough water (about 2/3 of a big pot, enough to cover all the vegetables);
- Add the cabbage too, taste and season with salt again if necessary;
- Cook for 45 min/1 h until all the beans are soft.
