TOMATO SOUP WITH BEANS AND VEGETABLES

INTRODUCTION

A warming soup for a cold day during autumn or winter

INGREDIENTS

  • 6 onions
  • 3 garlic cloves
  • 500 g of celery
  • 5 carrots 5
  • 5 potatoes 5
  • 2 cabbages 2
  • 3 kg of legumes mix
  • 1 L of tomato sauce
  • water
  • a bit of red wine

STEPS

  • Cut the onions, garlic, celery, carrots in small cubes and put in a pan with some olive oil;
  • Cut the potatoes in small pieces and add those too;
  • Simmer with a bit of red wine and let it evaporate;
  • Put tomato sauce as well, add salt and enough water (about 2/3 of a big pot, enough to cover all the vegetables);
  • Add the cabbage too, taste and season with salt again if necessary;
  • Cook for 45 min/1 h until all the beans are soft.
