RATATOUILLE AND GREEN BEANS

INTRODUCTION

Traditional French dish with a twist.

  • Number of servings: 20 people

INGREDIENTS

For the ratatouille:

  • 6 onions
  • White wine
  • 10 potatoes
  • 6 peppers
  • 4 eggplants
  • Sweet paprika powder, black pepper and cumin

For the green beans:

  • Margarine
  • 3 garlic cloves
  • 1 kg of green beans
  • Water
  • Lemon juice

STEPS

For the ratatouille:

  • Start by putting the onions to fry in a pan with oil;
  • Add some white wine and wait for it to evaporate on high fire, then add the potatoes and peppers;
  • Let them cook a bit and add the eggplants too;
  • Cover all the vegetables with enough water, salt and add some peeled tomatoes if you like;
  • Use paprika powder, black pepper and cumin to give it more taste and let cook until all the vegetables are soft;

For the green beans:

  • First cut off the tips, wash and rinse the beans;
  • Put finely cut garlic in a pan with margarine;
  • Add some white wine and, when it’s evaporated, put the beans;
  • Add some water and switch off the fire when they are still crunchy enough;
  • Add some lemon juice too if you wish.
