MAGIC TOMATO AND VEGGIES PASTA

INTRODUCTION

Juicy vegetable pasta with tomato sauce.

  • Number of servings: 20

INGREDIENTS

  • 6 onions
  • 4 garlic cloves
  • 7 carrots
  • 6 green peppers
  • 4 zucchinis
  • 1 L of tomato sauce
  • Salt, black pepper, oregano
  • 1.5 kg of pasta (penne)

STEPS

  • Cut all the 6 onions, 4 garlic cloves, carrots, peppers and zucchini in small cubes;
  • Put the onions and carrots to brown in a big pot;
  • After a few minutes, add the peppers and let them cook a bit;
  • Take the zucchini and add those too, keep stirring every now and then and add salt;
  • In the meantime, put the tomato sauce to cook in a pan with some salt and oil;
  • Add half the amount of garlic to the tomato and put the rest with all the vegetables;
  • Make sure to add enough salt, pepper, oregano in the pot, together with enough water to cover all the vegetables;
  • When cooked, pour the tomato sauce in the big pot and mix;
  • Last but not least, cook the pasta in salty water and add it to the mix. Serve and enjoy! 🙂
