COUSCOUS WITH VEGETABLES

INTRODUCTION

A fast and simple flavorful Moroccan dish.

INGREDIENTS

  • 2 kg of instant couscous
  • 1 kg of green beans
  • 1 kg of fresh or frozen green peas
  • 2 cauliflowers
  • 300 g of black olives
  • 250 g of sun-dried tomatoes
  • Parsley, lemon juice, black pepper

STEPS

  • Wash the green beans and cauliflower, cut them in small pieces;
  • Put some water to boil and add the vegetables. Put salt and cook until soft;
  • Use the same water to boil the green peas too and add salt;
  • Cut the black olives and sun dried tomatoes in small pieces too;
  • Put some oil in the couscous (amount often written on the package) and add the indicated amount of boiling water to it too;
  • Add the vegetables to the couscous and add parsley, lemon juice and pepper if you like.
