COUSCOUS WITH VEGETABLES
INTRODUCTION
A fast and simple flavorful Moroccan dish.

INGREDIENTS
- 2 kg of instant couscous
- 1 kg of green beans
- 1 kg of fresh or frozen green peas
- 2 cauliflowers
- 300 g of black olives
- 250 g of sun-dried tomatoes
- Parsley, lemon juice, black pepper
STEPS
- Wash the green beans and cauliflower, cut them in small pieces;
- Put some water to boil and add the vegetables. Put salt and cook until soft;
- Use the same water to boil the green peas too and add salt;
- Cut the black olives and sun dried tomatoes in small pieces too;
- Put some oil in the couscous (amount often written on the package) and add the indicated amount of boiling water to it too;
- Add the vegetables to the couscous and add parsley, lemon juice and pepper if you like.
