CHICKPEAS AND POTATO CROQUETTE IN TOMATO SAUCE

INGREDIENTS
- 8 potatoes
- 2kg of chickpeas
- 1.5L of tomato sauce
- 5 carrots
- 4 onions
- Salt, pepper, rosemary
- Breadcrumbs
STEPS
- For the balls: peel and cut the potatoes in small pieces, put in water and cook for about 20 min
- Rinse and wash the canned chickpeas
- Put 1/3 of the potatoes and 1/3 of the chickpeas in the mixer and start mixing
- Empty the mixer and do the same with the remaining potatoes and chickpeas
- Put all the mix in a big bowl. Add enough salt, pepper and rosemary
- Start making balls (you can already use breadcrumbs at this point to make it thicker)
- Pass the balls in a tray with more breadcrumbs and put in the oven to bake for about 30 min (flip them after 15)
- For the tomato sauce: cut the onions and carrots in small cubes and put in a pan with oil
- Add the tomato sauce, some salt and cook for about 20 min
- You can serve the balls with the sauce to give them even more taste
