CHICKPEAS AND POTATO CROQUETTE IN TOMATO SAUCE

INGREDIENTS

  • 8 potatoes
  • 2kg of chickpeas
  • 1.5L of tomato sauce
  • 5 carrots
  • 4 onions
  • Salt, pepper, rosemary
  • Breadcrumbs

STEPS

  • For the balls: peel and cut the potatoes in small pieces, put in water and cook for about 20 min
  • Rinse and wash the canned chickpeas
  • Put 1/3 of the potatoes and 1/3 of the chickpeas in the mixer and start mixing
  • Empty the mixer and do the same with the remaining potatoes and chickpeas
  • Put all the mix in a big bowl. Add enough salt, pepper and rosemary
  • Start making balls (you can already use breadcrumbs at this point to make it thicker)
  • Pass the balls in a tray with more breadcrumbs and put in the oven to bake for about 30 min (flip them after 15)
  • For the tomato sauce: cut the onions and carrots in small cubes and put in a pan with oil
  • Add the tomato sauce, some salt and cook for about 20 min
  • You can serve the balls with the sauce to give them even more taste
