STEPS
The process is simple: slice your cucumbers and prepare either a brine (salt and water) or a vinegar solution. This time, we opted for vinegar! We used 1L of alcohol vinegar, 2L of water, 1kg of sugar, and a pinch of salt for each jar. Then, we added some fun seasonings like mustard seeds, whole garlic cloves, peppercorns, chilli flakes, dill, and rosemary—each jar with its twist!
Here’s how we did it: First, gather your jars and pasteurize them by boiling them for 5 minutes to ensure they’re sterile. Heat the vinegar, sugar, and water together until the sugar dissolves and the mixture boils. Meanwhile, slice your cucumbers (we kept the peels since they were organic) and place them in the jars with your chosen seasonings. Pour the boiling brine over the cucumbers, seal the jars, and turn them upside down to cool completely (this helps with sealing).
Store them away, and they’ll be perfect even in winter!
