ROSEMARY AND HOW TO USE IT FOR A DELICIOUS RECIPE

Rosemary (Rosmarinus officinalis ‘Tuscan Blue’) is widely cultivated for culinary and medicinal use. It is used in a wide variety of dishes and it’s essential oil is also important for its powerful antibacterial properties. Additionally, the oil helps repel some blood-sucking insects, such as particular mosquitoes and ticks.Since rosemary is attractive and tolerates some degree of drought, it is also used in landscaping, especially in areas having a Mediterranean climate.

The volunteers at La Buona Terra farm decided to make a pasta sauce with rosemary, try it yourself and let us know if you liked it!

Rosemary pasta sauce

Instructions:

  • 3 sprigs of fresh Rosemary
  • 1 teaspoon of Thyme
  • 200 ml of vegan cream
  • 6 spoons of sunflower seeds
  • 2 cloves of garlic
  • Olive oil, pepper, salt and lemon juice optional

Ingredients:

First heat the vegan cream on medium heat. After some minutes add already chopped Rosemary, Thyme and garlic and cook until it starts to simmer. When the sauce is cooking, fry some sunflower seeds in a pan without oil. When everything is ready, mix the sauce with the sunflower seeds and blend it. Season it with salt, pepper and lemon juice for the taste. If you want you can add some “pasta water” in the sauce like real Italians.
